My own contribution this month is Spinach Red Pepper and Feta Cheese Frittata, posted at Naturally Radiant. I love how quick and easy this one is to prepare on those nights when there’s not a lot of time for supper – my husband just loves the flavor!

Spinach and Mushroom 'Meatloaf'

David Dicker presents Spinach and Mushroom ‘Meatloaf’, posted at V-Gourmet, saying, “Meatloaf dates back to at least Roman times; it’s mentioned in Apicius’s cookbook, c. 5th century CE. We use a “loaf” recipe adapted from the Eden Alley Cookbook, Stirwell to Heaven. It’s essentially spinach and breadcrumbs, so it’s a nice, heavy comfort food with a little guilt-reducing nutrients.”

  1. I was looking for a quick & healthy supper idea, and got inspired by Annie’s middle eastern lentils & rice recipe. I have rice, and I have lentils. What I ended up creating was pretty different – I decided to go Indian instead of middle-eastern, so I used turmeric and cumin and mustard seeds and onion and garlic… Ended up making the whole house smell yummy, and took less than half an hour from start to finish (rice takes a while to cook – there’s no good way to speed that up).
